Broth: The Little Bone Broth Co Grass Fed Beef Bone Broth

Ingredients

• 500ml Little Bone Broth Co Grass Fed Beef Bone Broth
• 700ml water
• 350g beef sirloin or rump steak, thinly sliced
• 200g dried quick-cooking noodles
• 2 tbsp white miso paste
• 1 tbsp fresh ginger, grated
• 2 garlic cloves, crushed
• 150g mushrooms, thinly sliced
• 2 small bok choy, roughly chopped
• 2 spring onions, thinly sliced
• 1 tsp sesame oil
• Soy sauce, to taste (optional)
• Sesame seeds, to serve (optional)

Method

1. Pour the Beef Bone Broth and water into a large saucepan. Add the ginger and garlic and bring to a gentle simmer.
2. Add the sliced mushrooms and cook for 3–4 minutes until tender.
3. Meanwhile, prepare the noodles according to packet instructions in a separate saucepan. Drain and divide between four serving bowls.
4. Add the thinly sliced beef to the simmering broth and cook for approximately 2–4 minutes, depending on thickness, until cooked through.
5. Add the bok choy and simmer for another 1–2 minutes until just tender.
6. In a small bowl, whisk the miso paste with a ladle of hot broth until smooth.
7. Reduce the heat to low, then stir the miso mixture back into the saucepan. Avoid vigorous boiling once the miso is added.
8. Stir in the sesame oil. Taste and add a little soy sauce if needed.
9. Ladle the hot broth, beef and vegetables over the noodles.
10. Finish with sliced spring onions and sesame seeds, if using.
