Broth: The Little Bone Broth Co Free Range Chicken Bone Broth

Ingredients

• 500ml Little Bone Broth Co Free Range Chicken Bone Broth
• 500ml water
• 300g cooked chicken, shredded (leftover roast chicken is perfect)
• 1 x 400g tin creamed corn
• 1 cup frozen sweetcorn kernels
• 150g dried thin egg noodles
• 2 spring onions, thinly sliced
• 1 tbsp soy sauce
• 1 tsp sesame oil (optional)
• Black or white pepper, to taste

Method

1. Pour the Chicken Bone Broth and water into a large saucepan and bring to a gentle simmer.
2. Add the creamed corn and frozen sweetcorn. Stir well and simmer for 3–4 minutes.
3. Stir in the soy sauce and shredded cooked chicken.
4. Add the dried egg noodles directly to the saucepan. Cook according to packet instructions, usually 3–5 minutes for thin noodles, until tender.
5. Stir occasionally to prevent the noodles sticking together. Add a splash of extra hot water if the soup becomes too thick.
6. Continue simmering until the chicken is thoroughly reheated and piping hot throughout.
7. Stir in the sesame oil, if using, and season with pepper.
8. Ladle into bowls and finish with sliced spring onions.
