Ingredients

• 500ml Little Bone Broth Co Free Range Chicken Bone Broth
• 300g cooked chicken, shredded
• 400g potatoes, peeled and cut into small 1.5cm cubes
• 1½ cups frozen sweetcorn kernels
• 1 medium onion, finely diced
• 2 garlic cloves, crushed
• 1 carrot, finely diced
• 30g butter
• 2 tbsp plain flour
• 200ml milk
• 150ml cooking cream
• 200ml water, plus extra if needed
• ½ tsp dried thyme
• Black pepper, to taste
• Fresh chives or parsley, chopped, to serve

Method

1. Melt the butter in a large saucepan over medium heat.
2. Add the onion and carrot and cook for 4–5 minutes until beginning to soften.
3. Stir in the garlic and dried thyme and cook for another 30 seconds.
4. Sprinkle over the flour and stir for 1 minute.
5. Gradually pour in the Chicken Bone Broth and water, stirring continuously to prevent lumps.
6. Add the diced potatoes and bring to a gentle simmer.
7. Cover and cook for approximately 12–15 minutes, stirring occasionally, until the potatoes are tender.
8. Stir in the sweetcorn, milk and shredded cooked chicken.
9. Simmer gently for another 4–5 minutes until the sweetcorn is tender and the chicken is thoroughly reheated and piping hot throughout.
10. Stir through the cooking cream and gently heat for 2 minutes without boiling vigorously.
11. For a naturally thicker chowder, gently mash a few potato pieces against the side of the saucepan and stir them back into the soup.
12. Season with black pepper and add a splash of water if the chowder is thicker than you prefer.
13. Ladle into bowls and finish with freshly chopped chives or parsley.
14. Serve warm with crusty bread.
