Cooking time: Approximately 30–35 minutes
Serves: 4
Difficulty: Easy
Broth: The Little Bone Broth Co Free Range Chicken Bone Broth

Ingredients

• 400g boneless chicken breast or thigh, diced
• 1½ cups dry orzo pasta (approximately 300g)
• 500ml Little Bone Broth Co Chicken Bone Broth
• 250ml hot water, plus extra if needed
• 200g cherry tomatoes, halved
• 1 small onion, finely diced
• 2 cloves garlic, crushed
• 3 tbsp basil pesto
• ⅓ cup cream
• ½ cup freshly grated Parmesan
• 1 tbsp olive oil
• Handful fresh basil leaves
• Juice of ½ lemon (optional)
• Salt and pepper, to taste

Method

1. Heat the olive oil in a large, deep frying pan over medium-high heat.
2. Add the diced chicken and cook for approximately 5–7 minutes until golden and cooked through (75°C internally). Remove from the pan and set aside.
3. Reduce the heat to medium. Add the onion and cook for 2–3 minutes until softened, then stir in the garlic.
4. Add the dry orzo and stir for one minute.
5. Pour in the Chicken Bone Broth and hot water. Bring to a gentle simmer.
6. Cook uncovered for approximately 10–12 minutes, stirring frequently to prevent sticking, until the orzo is nearly tender. Add a little more hot water if necessary.
7. Stir in the cherry tomatoes and cook for another 2–3 minutes until softened and the orzo is tender.
8. Reduce the heat to low. Stir through the pesto, cream and cooked chicken until everything is heated through.
9. Remove from the heat and stir in the Parmesan. Add a squeeze of lemon juice if desired.
10. Season to taste and serve with fresh basil leaves and extra Parmesan.
