Broth: The Little Bone Broth Co Grass Fed Beef Stock Pots

Ingredients

• 1.5kg floury potatoes, peeled and cut into even chunks
• 1 Little Bone Broth Co Beef Stock Pot (50ml)
• 3 tbsp olive oil
• 3 garlic cloves, crushed
• 2 tsp fresh rosemary leaves, chopped
• Black pepper, to taste
• Sea salt, to serve (optional)
• Fresh rosemary sprigs, to garnish

Method

1. Preheat the oven to 220°C (200°C fan bake). Place a large metal roasting tray in the oven to heat.
2. Place the potatoes in a large saucepan of cold, lightly salted water. Bring to the boil and simmer for 8–10 minutes until the outsides are just beginning to soften.
3. Drain well and leave the potatoes to steam-dry for 2 minutes. Shake them gently in the colander to rough up the edges for extra crispiness.
4. Carefully remove the hot roasting tray from the oven. Add the olive oil, followed by the potatoes. Toss carefully to coat, spread into a single layer and return to the oven.
5. Roast for 20 minutes, then turn the potatoes.
6. Meanwhile, pour the Beef Stock Pot into a small saucepan and simmer over medium heat for 4–6 minutes until reduced to a thick glaze. Stir in the chopped rosemary and garlic, then remove from the heat.
7. After the potatoes have roasted for approximately 30 minutes, spoon the stock pot glaze over them and toss gently to coat.
8. Roast for another 10–15 minutes until golden, crisp and tender throughout. Keep an eye on the garlic to prevent burning.
9. Transfer to a serving platter and finish with black pepper, a little sea salt if needed and fresh rosemary sprigs.
10. Serve immediately alongside roast beef, chicken, lamb or your favourite family dinner.

A Little Bone Broth Tip

Our Grass Fed Beef Stock Pots are a delicious way to add rich, savoury flavour to homemade roast potatoes. Reducing the stock pot to a light glaze allows the potatoes to absorb its flavour without becoming soggy.

For the crispiest results, make sure your potatoes are thoroughly steam-dried and have plenty of space on the roasting tray.
