Broth: The Little Bone Broth Co Free Range Chicken Stock Pots
Ingredients
• 200g cooked chicken, finely shredded
• 1 Little Bone Broth Co Chicken Stock Pot (50ml)
• 1½ cups sweetcorn kernels, drained if using tinned
• 2 large eggs
• ¾ cup self-raising flour
• ¼ cup milk
• 2 spring onions, finely sliced
• ½ red capsicum, finely diced
• 1 tbsp chopped fresh parsley
• 1–2 tbsp olive oil, for cooking
• Black pepper, to taste
To serve (optional):
• Sliced avocado
• Plain yoghurt or sour cream
• Lemon wedges
• Fresh green salad
Method
1. Pour the Chicken Stock Pot into a small saucepan and simmer gently for 4–6 minutes until reduced to approximately 2 tablespoons. Set aside to cool slightly.
2. In a large bowl, whisk the eggs, milk and reduced Chicken Stock Pot together.
3. Add the self-raising flour and stir gently until just combined.
4. Fold through the shredded chicken, sweetcorn, spring onions, capsicum and parsley. Season with black pepper.
5. The mixture should be thick enough to hold its shape when spooned into the pan. If too wet, add another tablespoon of flour.
6. Heat a little olive oil in a non-stick frying pan over medium heat.
7. Add heaped tablespoons of the mixture, flattening slightly to form small fritters. Cook in batches without overcrowding the pan.
8. Cook for approximately 3–4 minutes on each side until golden brown, cooked through and at least 75°C in the centre.
9. Transfer to a plate lined with paper towels while you cook the remaining fritters.
10. Serve warm with avocado, yoghurt, lemon wedges or a fresh green salad.
A Little Bone Broth Tip
Our Free Range Chicken Stock Pots add delicious savoury flavour to homemade fritters. Reducing the stock first concentrates its flavour without adding too much extra liquid to the batter.
These fritters are also a great way to use leftover roast chicken. Cool promptly and refrigerate any leftovers. For lunchboxes, pack chilled fritters with an ice pack to keep them cold until eaten.
