Broth: The Little Bone Broth Co Grass Fed Beef Bone Broth
Ingredients
• 800g beef chuck or gravy beef, cut into 3cm pieces
• 500ml Little Bone Broth Co Grass Fed Beef Bone Broth
• 300g button or brown mushrooms, sliced
• 1 large onion, finely diced
• 2 garlic cloves, crushed
• 2 tbsp tomato paste
• 1 tbsp Dijon mustard
• 1 tbsp Worcestershire sauce
• 1 tsp sweet paprika
• 1 tbsp olive oil
• 2 tbsp cornflour
• 2 tbsp cold water
• 150ml sour cream
• Black pepper, to taste
• Fresh parsley, chopped, to serve
To serve (optional):
• Cooked egg noodles, pasta, rice or mashed potatoes
• Steamed green beans or broccoli
Method
1. Heat the olive oil in a large frying pan over medium-high heat.
2. Brown the beef in batches for approximately 2–3 minutes per batch, turning to colour the outside. Transfer to the slow cooker.
3. Add the diced onion and sliced mushrooms to the same frying pan. Cook for 4–5 minutes until beginning to soften and brown.
4. Add the crushed garlic and sweet paprika and cook for another 30 seconds until fragrant.
5. Stir in the tomato paste, Dijon mustard and Worcestershire sauce.
6. Pour in approximately 100ml of the Beef Bone Broth and stir, scraping up any browned bits from the base of the pan.
7. Transfer the mushroom mixture to the slow cooker and pour over the remaining Beef Bone Broth. Stir gently to combine.
8. Cover and cook on LOW for approximately 6–8 hours, or until the beef is very tender.
9. Mix the cornflour with the cold water until smooth. Stir the mixture into the slow cooker during the final 20–30 minutes of cooking.
10. Replace the lid and continue cooking until the sauce has thickened slightly. If needed, transfer some sauce to a saucepan and simmer to reduce further.
11. Turn off the slow cooker and allow the bubbling to settle. Stir a little warm cooking liquid into the sour cream in a separate bowl, then gently fold it into the stroganoff.
12. Taste and season with black pepper. Add a small splash of water if the sauce is too thick.
13. Serve over cooked egg noodles, pasta, rice or mashed potatoes.
14. Finish with freshly chopped parsley and steamed vegetables on the side.
A Little Bone Broth Tip
Our Grass Fed Beef Bone Broth is a delicious base for slow-cooked beef dishes. As the beef becomes tender, the broth combines with the mushrooms, mustard and herbs to create a deeply savoury cooking sauce.
For the creamiest finish, stir the sour cream through after switching off the slow cooker. This helps prevent the sauce from splitting.
