Ingredients

• 1kg boneless, skinless chicken thighs
• 500ml Little Bone Broth Co Free Range Chicken Bone Broth
• 3 tbsp wholegrain mustard
• 2 tbsp honey
• 2 garlic cloves, crushed
• 1 medium onion, finely diced
• 1 tsp dried thyme
• 100ml cooking cream
• 2 tbsp cornflour
• 2 tbsp cold water
• Black pepper, to taste
• Fresh parsley, chopped, to serve

To serve (optional):
• Creamy mashed potatoes or fluffy rice
• Steamed green beans, broccoli or carrots

Method

1. Place the diced onion and crushed garlic in the bottom of a slow cooker.
2. Arrange the chicken thighs on top.
3. In a jug, whisk together the Chicken Bone Broth, wholegrain mustard, honey and dried thyme.
4. Pour the mixture over the chicken and season with black pepper.
5. Cover with the lid and cook on LOW for approximately 4–5 hours, or until the chicken is tender and reaches at least 75°C in the thickest part.
6. Carefully transfer the cooked chicken to a plate and cover loosely to keep warm.
7. Pour approximately 400ml of the cooking liquid into a saucepan. Bring to a gentle simmer over medium heat.
8. Mix the cornflour with the cold water until smooth, then whisk into the simmering liquid.
9. Cook for 2–3 minutes, stirring, until the sauce thickens.
10. Reduce the heat to low and stir through the cooking cream. Warm gently without boiling vigorously.
11. Taste the sauce and adjust with a little extra mustard or black pepper if desired.
12. Return the chicken to the saucepan and spoon over the sauce until coated and heated through.
13. Serve with creamy mashed potatoes or rice, steamed vegetables and freshly chopped parsley.

A Little Bone Broth Tip

Our Free Range Chicken Bone Broth is a delicious base for slow-cooker meals. As the chicken cooks, the broth combines with the honey, mustard and herbs to create a beautifully savoury cooking liquid that becomes a creamy sauce.

For a lighter version, leave out the cream and simply thicken the cooking liquid with cornflour.
