Broth: The Little Bone Broth Co Free Range Chicken Bone Broth

Ingredients

• 500ml Little Bone Broth Co Free Range Chicken Bone Broth
• 100ml turkey roasting juices, with excess fat skimmed off
• 30g butter
• 3 tbsp plain flour
• 1 small shallot or onion, finely diced
• 1 garlic clove, crushed
• 1 tsp fresh thyme leaves
• 1 tsp fresh sage, finely chopped
• 1 tbsp cranberry sauce or redcurrant jelly (optional)
• Black pepper, to taste
• Salt, if needed

Method

1. After roasting the turkey, carefully pour the roasting juices into a heatproof jug. Allow the fat to rise, then skim off the excess. Measure out approximately 100ml of the juices.
2. Melt the butter in a medium saucepan over medium heat.
3. Add the finely diced shallot and cook for 2–3 minutes until softened.
4. Stir in the garlic, thyme and sage and cook for another 30 seconds until fragrant.
5. Sprinkle in the flour and stir continuously for 1–2 minutes to form a smooth paste.
6. Gradually whisk in the turkey roasting juices, followed by the Chicken Bone Broth, adding a little at a time to prevent lumps.
7. Bring to a gentle simmer and cook for 5–8 minutes, stirring regularly, until the gravy is smooth and thick enough to coat the back of a spoon.
8. Stir through the cranberry sauce or redcurrant jelly, if using, for a subtle festive sweetness.
9. Taste and season with black pepper. Add salt only if needed, as the roasting juices may already be seasoned.
10. For an extra-smooth gravy, strain through a fine sieve into a warm serving jug.
11. Serve immediately with roast turkey, potatoes and festive vegetables.
